Simple No Bake Egg Free Gluten Free Cookies
Finding a recipe for egg free gluten free cookies can be a real challenge. So many recipes for egg free gluten free cookies require egg substitutes and still end up as a crumbly mess. These cookies hold together really well, with minimal crumbs.
This simple no-bake haystack cookie recipe has been a family favorite of ours for years. These egg free gluten free cookies are great for making with kids, without the need for an oven. Depending on the age of your child you can have them stir the dry ingredients, or if they are a little older they can also help to stir the chocolate mixture in the saucepan. With no raw egg in the cookie dough, these are the perfect cookies for safely licking off the mixing spoon or stealing a bite straight from the bowl.
Vegan Option
These cookies can be made Vegan by substituting coconut oil for the butter. Any coconut flavor from the coconut oil matched with the coconut already present in the cookies. A plant-based milk can also be substituted for the milk in the original recipe to make the cookies dairy free and vegan. Using soy or coconut milk keeps the cookies nut free and perfect for packing in school lunches where allergens are a concern.
Haystack cookies recipe
INGREDIENTS:
- 3 Cups Gluten Free Rolled Oats
- 1 Cup Shredded Coconut (unsweetened)
- ½ Cup Butter (or coconut oil)
- ½ Cup Milk (or plant-based milk like Almond Milk)
- ½ Cup Cocoa Powder
- 2 Cups Sugar
Optional: adding ½ a cup of chopped walnuts to the cookies adds an interesting twist to the cookies to make them appeal to not only the little ones but an older crowd as well.
STEPS:
- Mix together the oats and coconut in a medium bowl
- In a saucepan over medium heat mix together the butter, milk, sugar, and cocoa powder
- As the butter melts slowly bring the mixture to a slow boil for 5 minutes while stirring
- Add the chocolate mixture to the oats and coconut, folding together until evenly coated
- Spoon out tablespoon-sized portions onto a parchment-lined sheet with a cookie scoop
- Place in the fridge for at least 30 minutes to set.

NOTE: These egg free gluten free cookies are great to make ahead and freeze well for storage.
Fun twist
These cookies can easily be made into an Easter treat by placing a couple of mini-eggs in the center of the cookies while they are still warm to create a little nest for the chocolate eggs. Although that may be a little ironic to have an egg in an egg free gluten free cookie nest.
