I love to cook simple recipes that taste amazing. Food that is low effort with impressive results are always a hit in my book. Lydia can be a picky eater and is not a big fan of either cauliflower or broccoli but when topped with stringy melted cheese she quickly devoured her entire plate of veggies.
The idea for this recipe came from looking for a lower carb option to a classic double baked potato, which is still a great gluten free option.
As a side dish this cheesy oven roasted cauliflower and broccoli goes well so many things.
Cheesy Oven Roasted Cauliflower and Broccoli Recipe
Ingredients
- Cauliflower
- Broccoli
- Olive Oil
- Crushed Garlic
- Chili Flakes
- Shredded Cheese
- Bacon Bits
Steps:
- Cut the cauliflower and broccoli heads into bite size pieces
- Spread cauliflower and broccoli on a sheet pan (lining the pan with parchment paper will make cleanup much easier later)
- In a small bowl mix olive oil, garlic, and chili flakes
- Brush the oil mixture on top of the vegetables
- Sprinkle shredded cheese and bacon bits on top
- Bake at 325°F until the cheese is melted and bubbles (approximately 12 minutes)
- Season to taste
- Serve with side of sour cream (optional)
We often have a bag a pre-shredded Tex-Mex cheese blend in our fridge that we use when making this Cheesy Oven Roasted Cauliflower and Broccoli that reduces the effort required even further. Any type of cheese that melts into a stringy gooey goodness will work well, use your favorite type of cheese.
