Spice Up Your Morning Eggs
Bacon and eggs have been done over and over again. If you’re looking for a way to spice up the way you serve eggs, huevos rancheros are just the thing.
This classic Mexican egg dish can be simply translated as ranch eggs. The roots of this dish begin traced back to breakfast being served ranches in Mexico.
In simplest terms, huevos rancheros is a fried egg on a corn tortilla with beans topped with salsa it makes for the perfect gluten free Mexican food dish. We like to spread refried beans on a tortilla before placing the egg on top, but you will also find refried beans served on the side.
Corn tortillas are a great gluten free alternative to eat with your eggs to toast. This is just one of the reasons corn tortillas are a gluten free pantry essential.
Discovering Huevos Rancheros
The first time I had huevos rancheros, I knew I had found a new favorite. We were on vacation shortly after I had been diagnosed with Celiac disease and I was struggling with finding something gluten free to eat for breakfast. Looking at the menu huevos rancheros was listed as gluten free. Loving Mexican food I ordered huevos rancheros to try something new. The plate was beautiful, with bright yellow egg yolks, the soft green slices of avocado, and the rich red of flavorful salsa all on top of a warm bed of corn tortillas and refried beans.
My first bite was a hit! The richness of the egg yolk over the beans and tortilla, mixing with the spicy acidity of the salsa was a flavor party in my mouth. This was a dish I needed to learn how to make on my own. Returning home I studied a few recipes for huevos rancheros and was pleasantly surprised with how easy they were to make. As a busy family, this quick to prepare meal soon became a regular feature not only for weekend breakfasts but also for weeknight dinners when we needed a quick meal.
In our adventure to learn how to make huevos rancheros, we discovered that corn tortillas are essential to the gluten free pantry. Corn tortillas can be used in a variety of ways to maintain a gluten free diet from a traditional taco shell, as a dessert pastry in apple tacos, or as a bun for a hot dog cooked over a campfire.
Customization
One of the things that is so great about huevos rancheros is that the base of the dish can be tweaked and modified depending on your preferences for spiciness or other complementary sides. A variety of salsas can be used depending on your personal flavor preferences or what you have on hand. A change of salsa can transform the entire flavor of the dish.
