Ingredients
- Chicken breast
- Cucumber
- Carrots
- Lettuce
- Vermicelli Noodles
- Rice Paper
- ½ cup Peanut butter
- ½ cup Gluten Free Hoisin Sauce (Grab some here)
- Siracha (Grab some here)
Rolls
- Cut the chicken breast into ½” cubes and brown in a frying pan
- When the chicken has browned mix with a small amount of Gluten Free Hoisin sauce and we like to also add some Siracha to the chicken but this is dependent on how spicy you would like it.
- Prepare the Vermicelli noodles according to the package directions, rinse with cold water to stop the cooking process, and prevent the noodles from becoming one big sticky mess
- Prepare the vegetables by slicing them into long thin strips
- To assemble the rolls begin by soaking a sheet of rice paper in hot water for a few seconds, we have found that a large frying pan works well as a shallow flat dish for the hot water.
- Lay the softened sheet of rice paper on a plate, begin placing a few pieces of chicken, carrots, cucumber, and lettuce in a line in the center of the rice paper
- Add some vermicelli noodles on top of the other fillings
- Begin rolling by bringing the bottom of rice paper over the filling
- Fold in the sides and continue to roll
- Serve the peanut sauce with siracha on the side so that individuals can spice it up to their liking
This is such a great fresh-tasting meal that can easily be adapted to the size of the group. We have found this to be a fun meal to make when everyone picks their own fillings and rolling their own rolls.
Helpful tip: don’t fall into the trap of overstuffing the rice paper roll. Rolls that are overstuffed tend to explode and fall apart becoming very difficult to eat.
Peanut Sauce
- Melt the peanut butter in a small bowl
- Stir in the gluten free hoisin sauce.
- It really is that easy!
NOTE: Have fun with it, the first few rolls you make may fall apart, but that is part of the fun. Kids love the ability to make their roll and customize the fillings to their liking.
