Living in the Pacific North West we get a lot of rain days. On a rainy day there is nothing like a good bowl of soup to warm and comfort you from the inside and take the chill out of the air. The aromas of this gluten free hamburger -soup simmering on the stove will have your mouth watering in anticipation.
When we make soup we often make cheese biscuits to enjoy with our soup and to complete the meal. The soup and biscuits go so well together that this combination may soon become a rain day favorite for you too.
This is a quick and easy soup to make that is gluten free. A common challenge when beginning to eat gluten free is that many packaged soups contain gluten ingredients.
Another great thing that we love about this soup is that it refrigerates and reheats well providing a quick lunch in the following days.
Gluten Free Hamburger Soup Recipe
Ingredients
- ½ pound browned lean ground beef
- 1 clove of crushed garlic
- 4 cups beef or veggie broth (sub 4 cups water and gluten free bouillon powder)
- 1 can diced tomatoes
- ½ a bag of frozen mixed veggies
- 2 Tablespoons Italian Seasoning
- Basil
Steps:
- Brown and crumble ground beef and garlic
- Combine and heat broth, tomatoes, veggies, and browned ground beef in a large sauce pan
- Add Italian seasoning
- Add Basil to taste when the soup is warm
- Let simmer for 5 minutes
- Season to taste
- Optional: serve with cheese biscuits
NOTE: The quantities are suggestions only adjust and experiment with what you have on hand!
Tips and tricks:
Use lean ground beef and remove as much fat as possible when browning the ground meat to avoid a layer of oil floating on top of the soup. This is even more important if you plan to have left overs. One thing we like to do that helps with the clean up and speeds up cooking many of dishes is to brown large batches of ground meat when we purchase it freezing prepackaged portions of the meat. We only need to clear up the grease spatter from browning the meat one time and we have meat browned ready for making soups, sauces, and other dishes.
