From our many attempts in search of the perfect gluten free biscuit we have found that scoop or spoon biscuits work better than rolled biscuit dough for gluten free biscuits. Gluten free biscuits made from a rolled dough tend to be very dry and tough. Where scooped biscuits result in a more moist and tender biscuit. To scoop biscuits of a consistent size, use a baking scoop. Using the baking scoop for consistent sized biscuits ensures even and consistent baking of the biscuits.
Tip: Letting the dough rest allows the gluten free flour to absorb more of the moisture to prevent grittiness or graininess in the biscuits

INGREDIENTS
- 1 ¾ cup Robin Hood gluten free flour
- ¾ tsp Xantham Gum
- ¼ cup Cornstarch
- 1 Tbsp. Gluten free Baking Powder
- ¼ tsp Baking Soda
- ½ tsp salt
- 2 tsp sugar (1/4 cup for sweet scones)
- 8 Tbsp. butter
- 1 cup Milk
- 1 tsp Vinegar
(OPTIONAL)
- 1 Tbsp herbs or spices
- ~ ½ cup Addition Item (cheese, ham, berries, etc.)
STEPS:
- Pre heat oven to 425F
- Line a baking tray with Parchment
- Combine dry ingredients in a bowl and stir to mix well
- Cut in the butter until it is crumbled
- Make a divot in the center of the dry ingredients add milk and vinegar
- Mix well
- Add in herbs, cheese or other additional items
- Scoop onto the parchment lined baking sheet
- Flatten the scoops of biscuit dough slightly
- Bake to a light golden color, approximately 15 minutes
Just as vinegar and baking soda react to fuel many model volcanos. The small amount of baking soda and vinegar in this recipe will initiate a small chemical reaction to add additional air bubbles to the gluten free biscuits resulting in a lighter and fluffier biscuit.
