INGREDIENTS
- 1 whole Chicken
- Kosher Salt
- Olive oil
- BBQ Chicken Spice Rub
STEPS:
- Using kitchen shears or a clean heavy pair of scissors remove the chicken backbone by making a cut on each side of the spine.
- Open the chicken like a book and press down on the breast to flatten the chicken
- Small slits in the skin can be made to tuck in the ends of the chicken legs to help to hold them in place.
- Salt both sides of the chicken and let it rest in the fridge to for 24 hours tenderize the chicken for the ultimate flavor and moist meat and extra crispy skin.
- Cover the chicken in olive oil to act as a spice binder and then cover in BBQ chicken spice rub
- When ready to grill set the grill to approximately 400°F
- Place the chicken on the grill skin side up
- Cook to an internal temperature of 170°F, which will take approximately 30 minutes
- Remove and let rest for 5 minutes,

- Cook to an internal temperature of 170°F, which will take approximately 30 minutes
- Remove and let rest for 5 minutes,
