Chili is one of those meals that has so many variations and opinions on what is the correct way to cook and prepare. This version of chili offers a unique twist and some unconventional but tasty flavors to mix up your menu and routine. This is a great meal that can meet the needs of those that prefer to avoid red meat. This meal is also budget friendly and quick to make, it also can be made ahead and reheats well. I hope you enjoy this dish as much as we do.
While some may take exception to this being called chili as there is no chili powder or chilies in the recipe, we have still called it chili for a lack of better description. Chilies could be added to the dish to give it a little more spice and to further expand the flavors.
For those who want to personalize the chili further using a homemade salsa verde customized to your taste.
White Chili Recipe
Ingredients
- 1 pound ground turkey or chicken
- 4 cups chicken broth (substitute 4 cups water and bouillon)
- 1 can white kidney beans
- ½ jar salsa verde (green salsa) approximately 2 cups
- 1 can corn
- 1 tablespoon cumin
- 1 tablespoon taco seasoning
- Avocado
- Cilantro
- Nacho chips
Steps:
- Crumble and brown ground poultry in a frying pan over a medium heat and add the taco seasoning to the meat
- In a large sauce pan combine broth, beans, corn, salsa and cumin
- When meat has browned, add to saucepan, mix and allow to simmer
- Cut the avocado into cubes
- Serve in bowls and top with cubed avocado and chopped cilantro, with tortilla chips on the side.
NOTE: If you like a little extra heat add some sliced jalapeno pepper when serving.
